I want the submenu to extend the full width of the screen, but I can't get the setting to change anything. Any help appreciated. Please let me know exactly what changes if you're able to help. Thank you!

The full-width option for the sub-menu depends on your main menu width. I see that you are using the left and right menus, so you should use the sub-menu width option to set the sub-menu width.
